In this sous vide cooking class for beginners, Chef Ricky will guide you through proper techniques for preparing food in a vacuum-sealed plastic pouch that's cooked in a water bath at a precisely regulated temperature.

For the appetizer, you'll compile a compressed watermelon tataki appetizer with sweet soy glaze and deep fried shallots, then focus on your sous vide recipes. First, prepare whole snapper with ginger, garlic, shiitake mushrooms and soy sauce, and crГЁme brГ»lГ©e with vanilla and berries for dessert. You'll leave class armed with the secrets to continue sous vide cooking at home!

Guests are welcome to bring wine and beer to enjoy during the class.

What a truly wonderful experience my husband and I had cooking with Chef Ricky. He was professional, personable, and beyond knowledgeable. It was so fun & we learned so much. We are already talking about taking another class with him. We had experience with sous vide, but we still learned a lot and the menu was phenomenal. Don't think about it..just book it, now!

What a spectacular evening. Chef Ricky is a professional chef AND teaches his craft to others. He does these classes in his home, which a kitchen to die for! I had no idea what this type of cooking entailed, which was the purpose of my attendance. The menu was definitely gourmet while fairly easy to prepare, because Chef had already arranged all the ingredients and spices in our space. I would definitely attend another class with Chef Ricky in a New York minute! The other guests were fun to cook with too.
