Booked the class Handmade Italian Classics With Pasta with Chef Charles in Fresno

We made a from scratch 4 course Italian pasta dinner. It was such a great way to spend a date night. Chef Charles , his wife and their staff were so friendly and helpful. We were paired up with another couple from Fresno and the interactions and atmosphere were great. The food was so good, and Chef Charles is a great teacher and entertainer. If you are looking for a great and creative way to spend an evening together, I highly, highly recommend.

What an amazing experience! I walked into my neighbor’s home in response to an invitation for dinner with a small group of their friends and family, unaware that I would participate in the preparation of the meal. There was Charlie, brother of my neighbor, with stations ready for each of us as assigned by him in groups of three. He had a master plan for an incredible Coq au vin and it was such a joy to get to know all these strangers by working together as a team, each group contributing to the overall outcome. Charlie made it so easy and fun, with clear steps on what we had to do, even presenting our part in the meal to the rest of those seated and waiting. I loved the experience and can’t recommend Charlie high enough. He is so pleasant, calm, organized, enjoyable, and a master chef; a master at meal planning and a master at an in-home culinary experience that brings people together.

I have been fortunate enough to dine at some of the finest restaurants throughout Europe and Mexico City, and I can say without hesitation that Chef Charles' culinary artistry belongs in that conversation. His presentations are stunning—elegant and refined without ever feeling overworked or pretentious. Every plate is thoughtfully composed, with vibrant colors, impeccable technique, and flavors that rival those found in Michelin-starred restaurants. Each course was beautifully balanced and demonstrated not only exceptional skill but also a genuine passion for hospitality. Our dinner party exceeded every expectation. Guests continued talking about the food long after the evening ended, and every course was met with genuine excitement and admiration. What amazes me most is that Chef is not already internationally recognized. His talent is extraordinary, and his ability to create unforgettable dining experiences deserves a much larger audience. It is a reminder that true brilliance is not always accompanied by fame. If you ever have the opportunity to experience one of Chef Charles' dinners, don't hesitate. It is an experience you will remember long after the last course has been served.
