In this class, important skills will be developed. As you work together to prepare traditional Italian fare, not only will you learn exciting new culinary techniques, you and your team will be developing and strengthening important teamwork skills. From refreshing tomato bruschetta with olives, capers and basil to risotto all Romana featuring beef and tomatoes to tangy lemon semifreddo, learn how to make each dish from scratch side by side. Your team's ticket to Italy awaits!

Chef Eric began his foray into the culinary world nearly 20 years ago. After culinary school, he came on the restaurant scene, coincidentally landing in kitchens that focused on using local, sustainable ingredients with exclusivity. Shortly after, he became an executive chef at the young age of 27 in Hollywood, CA. Now, Chef Eric is following his true passion of teaching cooking classes and hosting private culinary experiences.

Chef Eric battled LA traffic to come to our house to cook the "light and bright french favorites" menu. As my wife and I sat in the kitchen, we discussed everything from Eric's past chef experience to food television to dietary recommendations for dogs! (We all love them). Along the way, Eric served us a four course meal. It began with cheese, fruit spread and toasted bread. Then we moved on to a great arugula salad with roasted carrots, avocado slices and a dressing that had as many layers of flavor as a good scotch. He even left us a little extra for the future. The main dish was mussels & fries in a garlic white wine sauce. We were especially interested in learning how to make this ourselves in the future, so he walked us through the process as he cooked, giving hints and tips along the way. I'll admit I drank the last of the sauce right out of the bowl. We finished with orange pastry cream eclairs. To be honest, I was so full at that point that I couldn't finish them and had to save a few for the next day. All in all, it was a wonderfully delicious learning experience. Highly recommend! Chef Eric was a great host! Very friendly, helpful and enthusiastic about the food we were making. He provided a really fun experience for us, and the food was absolutely incredible!
