Peel the potatoes and chop them into 1-inch dice.
In a large pot, add the potatoes and cover with cold water until the potatoes are completely submerged. Stir in the garlic cloves and one teaspoon of salt. Turn the heat to high and let the water come to a boil.
Once the water is boiling, reduce the heat to medium and cook for about 10-15 minutes until the potatoes are tender, or until a knife slides easily into the potato. Reserve 1 cup of the potato water. Drain the water, potatoes and garlic from the pot. Return the potatoes and the garlic into the still hot pot, shaking it to remove the residual water and steam, about 1 minute.
Mash the potatoes with a potato masher. Alternatively, move the hot potatoes and garlic into a large mixing bowl and process the potatoes and garlic through a potato ricer back into the hot pot.
Add in the vegan butter. Mix until everything is incorporated and smooth.
Add the potato water, a little bit at a time until you achieve your desired consistency. Season with salt and pepper to taste.
Top the mashed potatoes with freshly chopped chives and more vegan butter, if desired. Serve hot. Enjoy!
