Place the cookies on a sheet of parchment paper and cover them with another sheet of parchment paper or place them in a plastic zip-top bag.
Use a rolling pin to break the cookies into rough crumbs, then pour them into a medium bowl.
Add the water, softened butter, powdered sugar, ground allspice and salt. Stir until you reach the desired consistency (very smooth or with some larger bits of cookie still intact).
Store in a covered container and refrigerate until firm, about 20 minutes.
Spread on fruit slices, heat and spoon over ice cream, or spoon it over waffles, pancakes, or even apple pie. Enjoy!
Notes:
- Biscoff is a popular spice cookie brand.
- Good news! This technique works with many different cookies, such as vanilla wafers, sandwich cookies, or any crisp cookie you like.
- If you'd like a shelf-stable version of this spread that needs no refrigeration, use organic coconut oil instead of butter.
