Roast the garlic. Preheat the oven to 400°F. Slice the head of garlic in half, crosswise and place both halves in aluminum foil.
Drizzle olive oil on top of each half and completely wrap the garlic in aluminum foil. Roast for 30 minutes and set aside.
Prepare the seasoning mixture. In a bowl, combine the brown sugar, garlic powder, dried thyme, paprika, lemon zest, cayenne pepper, dried parsley and black pepper. Whisk to combine and set aside.
Prepare the seafood boil sauce. In a skillet over medium heat, add the butter, chopped onions and ginger. Sauté until tender. Remove the chopped onions and ginger from the pan and set them aside.
In the same skillet, add one tablespoon of the roasted garlic, lemon juice, honey and wine. Let the wine reduce in half.
Stir in the reserved sautéed chopped onions, ginger and the reserved seasoning mixture. Mix until well combined. Simmer the mixture for 10 minutes.
Serve topped with fresh parsley and paired with your favorite seafood. Enjoy!
