Step 1

Prepare the seasoning for the rib tips. In a small bowl, whisk together the lemon pepper, brown sugar, garlic powder, smoked paprika, onion powder, seasoned salt and black pepper.

Season the rib tips with the seasoning.

Preheat the oven to 350°F. In a cast-iron skillet or a heavy skillet over medium-high heat, grease the pan with avocado (or canola) oil and sear the seasoned rib tips. Sear the rib tips for 1-2 minutes per side until golden brown.

Place the seared rib tips on a sheet pan lined with aluminum foil and add the water to the sheet pan.

Cover the sheet pan with aluminum foil and pinch the sides to create a seal. Roast the rib tips for 1 hour. Remove the rib tips from the oven and remove the aluminum foil. Flip the rib tips and seal with aluminum foil again. Roast for an additional hour. Check to see if the rib tips are tender and cooked through. If not, roast for another 20-30 minutes.

Turn the oven to broil. Baste the rib tips with barbecue sauce and broil until slightly charred and glossy.
