Preheat oven to 350°F. Line two baking sheets with aluminum foil and top each baking sheet with a wire rack. In a small saucepan over medium heat, add the maple syrup and the bourbon. Bring the mixture to a boil and then reduce the heat to a simmer for about 3-5 minutes, or until the mixture has slightly thickened.
Place the bacon on the wire rack and lightly glaze one side of the bacon with the maple syrup mixture. Bake the bacon for 10 minutes.
Remove the bacon from the oven, flip the bacon over and glaze them again with the maple syrup mixture. Return the sheet pans to the oven, rotating them from the last time they were baked. Bake the bacon for 10-15 minutes or until crispy.
Season with freshly ground black pepper. Let bacon rest for about 10 minutes before serving. Enjoy!
