Learn expert tips and tricks to cooking seafood as you prepare two authentic Italian dishes.

In this interactive online cooking class, you'll learn how to prepare two Italian seafood classics from scratch. First, Chef Joseph will show you how to safely handle fresh seafood, then you'll make cozze alla marinara with mussels, tomatoes, white wine and garlic, and traditional spaghetti alle vongole featuring clams in a white wine and lemon sauce and topped with fresh parsley.

Prep Work Details

The night before or the morning of the class put your clams in a bowl with a handful of salt and cold water. Cover and put in the fridge. This will make the clams open and any of the sand that is trapped inside will fall to the bottom of the bowl. Before class grab them out of the bowl so the sand remains in the bottom and rinse with water.
