Prep Work Details

Prepare the 'starter' for the char siu bun dough the night before class. Although active working time only takes 5 minutes, it needs to be prepared 8 to 12 hours ahead of time. Use a kitchen scale to pre-measure all the ingredients, especially flour and sugar. If your spring rolls package is frozen, let it sit at room temperature for about 30 mins prior to the start of class. Shred the Napa cabbage. Thinly slice the carrots. Rehydrate the dried shiitake mushrooms and thinly slice. Dice-cut the pork belly. Mince the shallots.

Chef Li was on point with taking us through the process - 5 out of 5. There were some unique techniques (the Pork Bun Dough for example) that were very different to me, but we nailed it with the excellent instruction and demonstration. The recipes were exactly what I hoped, the pace of instruction was perfect, and the chef was very friendly. It was an excellent event camera over the stove would be my only recommendation, but still a 5 out of 5. I've participated in 4 (or more) Cozymeal event and I will be looking for future opportunities/events.

Really enjoyed our Dim Sum Brunch Experience with Chef Li! We were making complex courses, but she broke down the process so we could easily understand the steps. Everything turned out delicious!
