Cooking Class - Advanced Pasta: An Italian Heritage

What You’ll Do

Handcraft an elegant, authentic three course meal.

This class, featuring a three-course meal, is focused on pasta bursting with rich, mouthwatering flavors. Chef Ryan has created another lineup of recipes, using a completely unique set of techniques and equipment ranging from the easily accessible to unique opportunities to experience specialized pasta equipment.

Class begins with pici, a hand-pulled noodle served alla carbonara, a traditional breakfast/late night preparation. Next, thin strips of pea green infused pasta are stretched across a cavarola board to resemble pea pods. This dish is tossed with a variety of sweet peas and topped with toasted almonds and lemon marscarpone. Finally, a rich shrimp broth is filled with intricately formed pastas, sheeted and twisted over shrimp, mushrooms, mint, and basil.

Guests are welcome to bring wine and beer to enjoy during the class.

Chef Ryan has studied varied cuisines and was trained in baking and pastry at the Ritz Carlton. He has held titles such as pastry chef at Chez TJ, which held two Michelin stars, and as chef de cuisine at Baume Restaurant, which also earned two Michelin stars during his time there. His dishes are founded in comfort, thanks to his Italian heritage, and imbued with grace thanks to his classical French training.

Great introduction to the science of pasta and the landscape of things you can do with 4 ingredients. We got to explore color and texture and make 3 very different pastas (and 3 meals worth of food) in the 2-hour session. Definitely recommended.
