Indulging your sweet tooth is all the more satisfying with the knowledge that the treat you are enjoying was created by your own hands. Chef Ruth shares her love of all things sweet to start you on your delectable journey. Passionate about chocolate since childhood, she has travelled to Australia, Paris, and Asia to refine her skills as a chocolatier.

The class begins with learning to make honeycomb, a traditional homemade sweet. The second course will have you creating a delicious and chewy nougat, followed by a crunchy English toffee that is sure to delight! From there, you will create a decadent almond roca. Complete your class with a distinctly French dessert worthy of a grand finale; fleur de sel caramels.

Meet your chef


Chef Ruth’s love affair with chocolate began at one of her first jobs working at sweets shop in her hometown of Boston. She has traveled to Tahiti to taste fresh vanilla beans, sold madeleines in Sydney and furthered her chocolate skills in Paris and Asia. Ruth is devoted to educating kids and adults alike about beloved cocoa beans. She learned how to be a chocolatier at The French Pastry School and the Callebaut Chocolate Academy.

Truffles have been an obsession of mine pretty much my whole life, but it honestly never occurred to me until now to learn how to make them myself so that I can have them any time I want. I’ve taken a few cooking courses before, so when I discovered this class that would teach me how to make caramels and truffles I had to do it. I called my sister and we both signed up for the next available class. Chef Ruth was our instructor, and just the fact that she taught my sister, who may be the worst cook on the face of the planet, to make a delicious truffle, tells you everything you need to know about her skills. My sweet tooth was as happy as it has ever been and my family is loving it because I have been a truffle making maniac ever since.
