Cooking Class - Vegan Mediterranean Favorites
$ 115 Per person
all-inclusive: 2.5-hour class, 4-course meal.
Delight in flavors of the Mediterranean with this completely vegan menu.
Roll up your sleeves and practice culinary techniques as you work through a menu of Mediterranean-inspired dishes in this hands-on cooking class with Chef Landi.
Begin by chopping ripe tomatoes and herbs for a simple but mouthwatering bruschetta and simmer lentils with homemade stock and a minced vegetable medley for a creamy soup. Next, you'll roll out homemade pasta noodles infused with turmeric and toss them in a cashew cream sauce studded with fresh vegetables, including mushrooms, zucchini and yellow squash. Finally, craft a decadent classic French vegan crêpe, filled with Nutella delicious raspberry jam, topped with dairy free ice cream & a drizzle of maple syrup.
Guests are welcome to bring wine and beer to enjoy during the class.
Tomato Basil Bruschetta
With toasted Italian bread, garlic, basil leaves, extra virgin olive oil and a balsamic reduction
Creamy Vegan Lentil Soup
With extra virgin olive oil, onions, garlic, carrots, celery, fresh parsley, cumin, oregano, homemade vegetable stock, lemon juice, truffle oil and croûtons
Turmeric Fettuccine Pasta
With onions, garlic, mushrooms, green and red peppers, zucchini & yellow squash, and a sauce of cashew, Chipotle, minced garlic, lemon juice and vegetable stock
Vegan Classic French Crêpes
With all purpose flour, corn starch, granulated sugar, salt, canola oil, almond milk, water, lemon extract, and a filling of peanut butter, strawberry jam, dairy free ice cream and maple syrup

Chef Landi began his foray into the restaurant industry over 20 years ago as a server in Italy, and quickly found himself working in the kitchen, learning the skills and techniques that have been foundational to his now successful culinary career. In 2001, Chef Landi moved to the U.S. and discovered a newfound passion for teaching. Now, he is both a chef at an Argentinian steakhouse and a lauded culinary instructor.
