In this hands-on class with Chef Olivier, you will learn how to prepare a gourmet three-course dinner menu using fresh and seasonal New England ingredients transformed by classic French cooking techniques.

Some of the recipes you can look forward adding to your culinary repertoire in this class include a creamy butternut squash bisque with pancetta and garlic croutons, salmon poached in a buttery white wine sauce, gratin dauphinois, tender braised endives, and homemade profiteroles filled with vanilla ice cream and drizzled with a rich and warm chocolate ganache for dessert.

Guests are welcome to bring wine and beer to enjoy during the class.

We arranged a class "New England Parisian Brasserie" with Chef Olivier for our son and two of his friends. All of them like to cook, but they are 12-year old boys. Chef Olivier did a great job in all aspects. The menu is well balanced with some items being relatively simple and others - more advanced, but all very tasty. The chef flawlessly managed the team of very inexperienced cooks giving them the tasks they can handle, pushing them a little bit out of their comfort zone, encouraging them and making them laugh. The kids enjoyed both cooking and eating. I was the only adult on the team and learned a lot about the technics I had questions about. Now I'm less afraid to make Pate au Choux on my own. I would highly recommend Chef Olivier for a team of any cooking experience.

We had a wonderful night with Chef Olivier. The food was incredible, Olivier was highly personable, and I feel as though I learned a lot. His newly remodeled kitchen is also the stuff home design dreams are made of. Highly recommend!

We had an excellent time with Chef Olivier! He was a great instructor and took the time to walk us through each step of the cooking process and answer all of our questions. The meal was sensational and the experience was truly unique!
