Cooking Class - Southwest Vegan Fiesta

What You’ll Do

Chef Dominique gives classic Mexican cuisine a vegan update with this spicy menu.

You don't have to give up Mexican food if you decide to go vegan. The culinary traditions of the Southwest are built on beans, peppers and fresh vegetables, all of which are prominently featured in this simple and healthy menu.

Begin the hands-on class with a spicy, classic tortilla soup. Traditionally made with chicken, this version is meat free but flavor packed. The next course is the official dish of Oaxaca: mole. This version substitutes chickpeas for the meat, but retains all the spices and the chocolate. Creamy chocolate chia pudding finishes the evening.

Guests are welcome to bring wine and beer to enjoy during the class.

Fun. Dominique was a great host. Little disappointed in having to wait a bit for the recipes.

Outstanding, I have had other cooking classes, this by far has been the best. Chef Dominique was brilliant letting us get hands on with the Ingredients and creating delicious food. I definetly will be back for another lesson and bring friends. Thank you.
