Take a trip to the South and enjoy some down-home classics with Chef Eric.

In this hands-on class with Chef Eric, you will learn the basics of Southern cooking and add a handful of classic Southern recipes to your culinary repertoire.

Buttermilk — the secret to many classic Southern recipes — churns up menu excitement from the beginning as you learn how to make homemade buttermilk ranch dressing for a simple spinach salad. You will also discover how buttermilk works its magic to tenderize chicken while adding another layer of flavor to your fried chicken as well as subtly elevating the topping of your classic peach cobbler.

Guests are welcome to bring wine and beer to enjoy during the class.

I had the pleasure of attending Chef Eric's cooking class, performed in the very large and bright Cornucopia kitchen and presentation facility. Chef Eric is very professional and knowledgable, but also down to earth and fun to talk to. His Cajun Catfish Tenders with Spicy Remoulade was very tasty, and the Thai Shrimp Curry had a wonderful balance of interesting flavors (coconut milk and chili paste!) and was very tasty, light and smooth. The Chicken and Andouille Sausage Gumbo was a hearty dish with a little kick, but not overpowering. Great comfort food. All in all, everything was quite good, it is a very nice facility for groups both large and small, and Chef Eric made it a relaxing and fun experience. Highly recommend.
