In this simple three-course class your team will sharpen their knife skills to learn the basics of French cooking. This hands-on class will take you from creating homemade stock to be the base of a pumpkin and truffle soup, followed by a wild mushroom stuffed quail and finished with a delectable winter sorbet.

Our restaurant Le Gourmand was one of the pioneers of 'Farm to Table' cooking and I am often referred to as the 'Father of Northwest Cuisine'. I specialize in classical French Cuisine using local organically-grown ingredients and wild, foraged edibles and am in my fifth decade of culinary instruction!

Chef Bruce is an amazing chef and I can only speak highly of him. We booked his cooking class with a few friends in Seattle and really enjoyed it. We had a great meal, learned a lot about different techniques, and were also entertained the entire time. I highly recommend him to anyone who is looking for a fun and educational cooking class in Seattle.

Chef Bruce and his wife used to own a very famous French restaurant in Boston before they decided to retire and focus on cooking classes. He is a great chef and a fantastic instructor. Given that his recipes are very complicated, he often does more of a cooking demonstration than a cooking class but it's still very engaging and he teaches the students many useful techniques. The end result of the class was a very delicious meal - one of the best dishes I have had!

We took this French cooking class with Chef Bruce in Seattle and loved it! The entire experience was an absolute dream. His teaching style is more demonstrational in nature and we didn’t mind one bit. We were able to witness our french meal being crafted and cooked - the appetizer was a mint zucchini soup with the most luscious and delightful taste and texture (no cream), fresh crayfish, shellfish, and fish set in a chanterelles sauce and set in abalone shells, followed by apricot shiso mint sorbet. Our chef was modest and very warm. Special thanks to Cozymeal for a very memorable experience. I highly recommend them for a special occasion or a night out.
