Join Chef Logan for an in-depth introduction into the Maillard reaction and other cooking techniques.

Take a dive into the chemistry side of cooking in this interactive, live online cooking class with Chef Logan. You’ll learn all about the Maillard reaction — how to transform texture and flavor by cooking food until the natural sugars begin to caramelize — along with new knife skills, such as chiffonade and julienne cuts. Some of the recipes you'll prepare include roasted salsa roja and Mexican street-style Cajun chicken tacos served with a variety of toppings.

Chef Logan taught a great class and delivered on the skills focus while also making tasty food. I appreciated the instruction and tips on knife skills and the Maillard reaction as well as the options for adjusting the recipe and teaching about the ingredients. I'd take another class with Chef Logan and Cozymeal.

Chef Logan was amazing. I've done several classes but this one was by far the best. The food was good, but even better was Chef Logan's style. He was quick to encourage and answer questions. He was very good about explaining why we should use one thing vs another (i.e Roma tomatoes as opposed to slicing tomatoes). Who knew that Canadians make the best Salsa Roja :)? Would definitely sign up for another one of his classes.
