Prep Work Details

Here is the list of prep work that should be done prior to the start of the class: -Boil the potatoes about 45 minutes prior to the start of the class and keep warm. We will peel them together. You will know when they are done when the skin starts to have little striations and you can easily pierce with a knife. Note: you do not want them falling apart, so keep a close eye at the 45-minute mark. -Melt the butter with the thyme (or whatever herb you are using) in a small pot on the stove and have ready -Slice your garlic and place into the sautГ© pan you will use for making the tomato sauce -Have your pot of water salted and close to a boil -Open your can of San Marzano tomatoes and pour into a bowl and crush by hand. 1 whole can (28 ounces) will make enough sauce for 6 servings. You can use just 1/4 or 1/2 a can if cooking 1-3 servings. The recipe makes enough gnocchi for 6 servings. The gnocchi freezes very well, but if you want to cut down on the quantities for 1 to 2 people, follow these proportions: -1 large russet potato -3/4 to 1 cup of flour Feel free to message me before the class with any additional questions! Cheers, James
