Get acquainted with phyllo — a versatile dough that can be used for any course.

In this hands-on vegan class, Chef Sawsan will teach you the basics of handling phyllo and how you can use it in nearly any dish from appetizer to entrГ©e to dessert.

Phyllo, also spelled filo and Greek for "leaf," is tissue-thin sheets of dough that have very little fat. When phyllo is baked, the layers become airy, crisp, and beautifully flaky. Many popular Greek dishes are made with phyllo dough, three of which you will learn how to prepare in this class, including spinach-layered spanakopita and baklava with decadent syrup.

Chef Sawsan is personable, knowledgeable and great at her trade. She took the time to explain the recipes and methods for our group and was patient as we embarked on making the recipes on our own. Highly recommend her!
