Cooking Class - Fundamental Knife Skills

What You’ll Do

Learn how to properly wield your kitchen knives with confidence in this hands-on class.

Chef Gene imparts to you perhaps the most crucial element of home cookery: fundamental knife skills. This class will involve both demonstration and hands-on knife care and handling practices. Chef Gene asks that you bring a chef’s knife and paring knife so you can learn how to both sharpen and hone the knives correctly.

Once you understand safe handling and the appropriate knives used for chopping, mincing, slicing, dicing, and chiffonade, you will put your new knife skills to good use to prepare and enjoy three delicious hors d'oeuvers.

Guests are welcome to bring wine and beer to enjoy during the class.

Gene was accommodating and went out of his way to make the team building experience fun and enjoyable. Everyone enjoyed making pasta and learning new skills in the kitchen. The food was GREAT!

Chef Gene did a fantastic job making us all feel comfortable, explaining the process and adapting the event to meet our expectations. He is very knowledgeable and made sure we were all engaged in the preparation of the meal. The ingredients were of high quality and the menu featured seasonal ingredients per our request. We all went away with many great tips on how to improve our cooking skills.

What a truly memorable evening learning so much from an expert teacher and consummate chef who is the former head of the Portland Culinary Institute. I highly recommend that everyone who would like raise their cooking skills to the next level take a class with him.
