What You’ll Do

Make and enjoy decadent homemade chocolate with Chef Ashley.

In this hands-on class, Chef Ashley will teach you how to use single-origin chocolate to make artisan truffles from scratch. You'll also learn about the history of chocolate and its roots in Mesoamerica and present-day Mexico.

Begin with the truffle-making process and create single-origin dark chocolate ganache truffles using the chef's handmade chocolate. While you wait for your truffles to cool, Ashley will lead you in making Mexican-style drinking chocolate and tasting three different craft chocolate bars from Mexico and around the world. Finish by scooping and decorating your truffles, and a tour of Chef Ashley's micro-batch chocolate room, learning about the different tools and equipment used to make craft chocolate.

This gluten-free class can also accommodate vegans.

Guests are welcome to bring wine and beer to enjoy during the class.

Chef Ashley is a master chocolatier and celebrated pastry chef. After graduating from Rice University, she developed innovative sustainability techniques in the kitchen. Most recently, she helped launch a popular chocolate company in San Francisco. Chef Ashley's creative confections have been featured in famous publications, such as the New York Times, and she has received multiple international awards for her unique culinary creations.

Chef Ashley was a really sweet, engaging, and informative host. I took my mom to this class for mothers day, and it was just perfect!

We had a great experience with Chef Ashley. She is a wonderful host. We learned many things about chocolate that we never knew before and left much more knowledgeable about cacao, the chocolate-making process, and all other things involved. The truffles we made were delicious. We would suggest having larger glove sizes for the customers that cannot fit into small or medium size gloves.
