What You’ll Do

Travel down the Mississippi with Chef Justin and sample fresh Creole and Cajun fare.

Although both Creole and Cajun cuisine have a heavy French influence, Creole is often considered city cooking, while Cajun has a definite country flavor. Chef Justin will teach you all about both.

Begin your journey down the Mississippi with blackened sea scallops on a bed of seaweed and watercress, followed by a bowl of classic gumbo made with chicken, andouille sausage and Gulf shrimp. For the main course, learn how to make salmon Г©touffГ©e with yams in bourbon and spices, and a New Orleans classic for dessert: flaming bananas Foster with pralines and ice cream.

Guests are welcome to bring wine and beer to enjoy during the class.
