In this hands-on class with Chef Eric, you will learn how to prepare a four-course Southern dinner filled with classic and traditional Southern fare that will also feature a few elegant and classy twists.

Some of the recipes you can look forward to mastering in this class include a Southern take on a Caesar salad with homemade smokey onion ranch dressing, a sweet corn vinaigrette to pair perfectly with your fried chicken, and a show-stopping soufflГ© to end on a lighter and brighter note.

Guests are welcome to bring wine and beer to enjoy during the class.

Chef Eric began his foray into the culinary world nearly 20 years ago. After culinary school, he came on the restaurant scene, coincidentally landing in kitchens that focused on using local, sustainable ingredients with exclusivity. Shortly after, he became an executive chef at the young age of 27 in Hollywood, CA. Now, Chef Eric is following his true passion of teaching cooking classes and hosting private culinary experiences.

Chef Eric is an incredibly talented Chef and fun to be around! He made a Oaxacan pizza that blew my mind with how good it was. The homemade refried beans were the best I've ever had!

Chef Eric battled LA traffic to come to our house to cook the "light and bright french favorites" menu. As my wife and I sat in the kitchen, we discussed everything from Eric's past chef experience to food television to dietary recommendations for dogs! (We all love them). Along the way, Eric served us a four course meal. It began with cheese, fruit spread and toasted bread. Then we moved on to a great arugula salad with roasted carrots, avocado slices and a dressing that had as many layers of flavor as a good scotch. He even left us a little extra for the future. The main dish was mussels & fries in a garlic white wine sauce. We were especially interested in learning how to make this ourselves in the future, so he walked us through the process as he cooked, giving hints and tips along the way. I'll admit I drank the last of the sauce right out of the bowl. We finished with orange pastry cream eclairs. To be honest, I was so full at that point that I couldn't finish them and had to save a few for the next day. All in all, it was a wonderfully delicious learning experience. Highly recommend!
