For centuries, Kikuichi bladesmithing has been crafting fine steel blades, even fashioning Samurai swords for the emperor of Japan. For the past 150 years, they’ve turned their attention to perfecting kitchen cutlery, which becomes evident with this gyuto knife. Each blade is hand-hammered, Damascus-clad, and given a tsuchime finish that results in hollow-ground cavities to minimize drag and detach food while cutting. This Japanese chef knife is thinner and narrower than traditional western chef knives, making it more suitable for slicing meats, vegetables and fish. And, it’s sharpened to 60 Rockwell hardness for superior edge retention. Not only is it superior to standard chef knives in its function, this Japanese knife is superior in style—the eco-wood handle is triple-riveted for an beautifully artisanal appearance, and each blade is stamped with an elegant chrysanthemum, the symbol of the Japanese royalty.
