What You’ll Do

Learn how to select, cook and elevate seafood for a Mediterranean-style meal with Chef Chad.

In this hands-on cooking class, the chef will teach you how to make vibrant dishes from start to finish, including tips for choosing and preparing your seafood. Practice cleaning whole octopus and utilizing seasonal ingredients to create a Mediterranean-inspired menu.

Begin with a kale salad with marinated feta and tangy lemon-Dijon aioli before Chef Chad demonstrates how to make pan-seared branzino with a gourmet twist. Prepare octopus escabeche with rich confit tomatoes and crispy chickpeas and make an olive oil cake with candied orange peels for dessert.

Guests are welcome to provide wine and beer to enjoy during the class.

His culinary journey has taken him to top kitchens, including the 2 Michelin-starred Melisse in Santa Monica and 1 Michelin-starred Heritage in Long Beach. He also served as pastry chef at a GQ Best Restaurant in Seattle, specializing in an 18-course omakase tasting menu. Now based in Southern California, Chef Chad shares his passion with gourmet diners and students alike.
