What You’ll Do

Learn time-honored pasta-making techniques while cooking vegetable-forward recipes.

In this hands-on cooking class, Chef Chad will guide you in preparing fresh pasta and sauce to serve as the centerpiece of a classic Italian-style meal that features high-quality ingredients and smart cooking methods. Turn your kitchen into Little Italy with authentic Roman recipes.

Begin by making the pasta dough from scratch. While the dough rests, handcraft crisp sourdough bruschetta, and roasted bell peppers stuffed with an herbed cannellini bean filling. Then, choose from tortellini, ravioli or tagliatelle for your pasta and make a fresh sauce with seasonal vegetables. For dessert, Chef Chad will teach you how to make coffee-infused gelato with roasted chestnuts.

Guests are welcome to provide wine and beer to enjoy during the class.

Chef Chad began cooking at just eight years old, later discovering the link between nutrition and health through sports. His culinary journey has taken him to top kitchens, including the 2 Michelin-starred Melisse in Santa Monica and 1 Michelin-starred Heritage in Long Beach. He also served as pastry chef at a GQ Best Restaurant in Seattle, specializing in an 18-course omakase tasting menu. Now based in Southern California, Chef Chad shares his passion with gourmet diners and students alike.
