Discover the secrets to preparing chilled recipes, including appetizers, palate cleansers, salads and desserts.
During this cooking class, Chef Greg will guide you through a culinary exploration of food best served chilled and show you that you don't need heat to bring the flavor.
You'll prepare citrus-packed seafood ceviche with peppers and herbs, and smoked salmon and cream cheese cornets, as well as a traditional tomato bruschetta topped with garlic, basil and olive oil. You'll even indulge in a light yet indulgent chocolate mousse dessert.
Guests are welcome to provide wine and beer to enjoy during the class.

Growing up, Chef Greg fell in love with his mother’s great cooking and quickly began pursuing his own culinary career. After culinary school, he spent the next 25 years working in restaurants all across the world, including a stint at the prestigious Le Bel Age hotel in Hollywood. He’s amassed an expansive knowledge of cooking fundamentals, including chemistry and knife skills, and specializes in Italian and Mediterranean food.

GREG IS AMAZING! I have taken cooking classes over the years in NYC and our experience with Greg by far was the best ! Greg came for our cooking class - in my son's college house which looked and was equipped as you may think:) He read the room/told all we could participate/watch or not-it was our night. He taught as he cooked-telling stories-keeping all entertained. We all learned so much-each taking away different tips/concepts depending on our existing skill set. The food was delicious, the recipes absolutely manageable and Greg threw in tips on things to add that ended up giving us 4 different sauce options out of the original tomato sauce. The fact did not go unnoticed that the wonderful gourmet meal we ate came out of the boys kitchen-using their minimal cooking equipment on an old electric stove!! The dishwasher broke the week before yet nothing phases Greg and he left the kitchen cleaner (much) than when he arrived. Overall educational, delicious and fun, fun, fun!

I was very excited about this cooking class after reading numerous positive reviews but regrettably, my experience with Chef Greg fell far short of my expectations. Initially, there were issues of professionalism: Chef Greg notified me the morning of our scheduled class to that he mixed up the date of our session and had committed to another engagement, indicating a potential delay. While he ultimately arrived punctually, his communication around the matter lacked tact. Moreover, our session fell short of the promised agenda as we only prepared three out of the four listed menu items. The preparation of Chicken Pizzaiola, a highlighted dish, was omitted entirely, and we were instead left with a package of raw chicken in the refrigerator along with a pot of red sauce prepared by Chef Greg. Additionally, photos of the class suggested that we would be preparing hand made pasta, but we used a store bought package of pasta instead. Furthermore, the nature of the session deviated significantly from the interactive cooking class experienced we anticipated. Instead, it resembled more of a private chef service, with minimal engagement in the process.

Hired Chef Greg for my wife's birthday to come to our home to bring his culinary delights for just the two of us. Chef Greg was FANTASTIC!. His food was awesome and you could tell how much he loves the kitchen and cooking for others. Great personality - we all talked all night. Very respectful of our home and cleaned up everything!!! Chef Greg was amazing! Not only was he super friendly and punctual, but his 4-course refined seasonal Italian meal was to die for. I have never done this before, and now that I have, it won't be the last. It was amazing watching him cook and in my own kitchen without me having to lift a finger. All the meals came out on time, were beautifully plated and tasted superb. Best part, he did all the cleanup afterwards and even gave our new puppy some attention so that we can enjoy his birthday dinner.

Great experience with Chef Greg. We helped a little and learned a few new things on a terrific evening. The food was simple and yet tasty, with the best of every ingredient brought out. Best part will be day two on the sauce that was made. Chef Greg explained what he was doing every step of the way and why it was important. Bonus was that he cleaned / tidied as we ate! Chef Greg was a great choice for our palates and the experience that we wanted to have.

My wife and I found our Chef! Greg cooked us a very delicious meal (Familiar American Favorites) and taught us a few tricks along the way. He's very smart, funny and interesting, so listen when he speaks. He's like a cool uncle. He was very professional and you can hear and see that he's a decent guy. We can't wait to have him back over!

Chef Greg came to our home and cooked up some delicious food while teaching us some great new cooking skills especially regarding heat! He was also kind enough to modify the menu for pescatarians while still educating us about the traditional Mother Sauces. The class was very informative and the food delicious-- we have so many leftovers! It was very impressive how quickly he whipped up so many dishes especially since nothing was prepped ahead of time-- this was awesome because it proved how possible it is to cook like this on your own. We appreciated that Greg was willing to suit the class to what we were looking for-- information versus just tasting delicious food-- it's really what you decide to make of it. He's a social chameleon and has some great stories about life outside the kitchen!

Excellent experience. Chef Greg was knowledgeable, and suggested a different course for us than the sauces one in advance (since we are pescatarian). The course incorporated seafood and 3 of the 5 mother sauces, and he taught us about it throughout. It was less of a "class", and more of a tasting and showing experience, although we could've cooked more if we wanted to. He cleaned as he went, was respectful of our home, and only required use of our dishes (he brought utensils to prep the food with, aside from pots and pans). Overall, it was a great experience for a special evening for my wife and I, and we would highly recommend Chef Greg.

Wow, what a great experience! Greg was punctual, professional, and great company. We enjoyed watching him work and following along to learn his methods. The food was delicious -- especially the shrimp scampi. We also enjoyed hearing about his life and travels. This was everything we could have asked for in an evening. We had a great experience with Chef Greg. The menu was very robust and each course was delicious. We were full by the end of the dinner! We didn't know what to expect since this was our first time. The process is: The Chef cooks and he explains his cooking process and provides tips and techniques along the way. We asked questions and he was great at sharing his knowledge. (This isn't one of those "hand-on" learning by "doing" classes -- but you get to watch the chef work and learn by observing -- which was just as great!). After each course was prepared, we ate, fresh off the heat, and talked about the dish, prior to moving on to the next course. It was interesting to watch a real chef work, close up. Greg was kind and was great at handling our dog too, even though he kept interrupting and begging for food. We very much enjoyed the experience and learned plenty. And, did I mention, the food was delicious? Great class. Thank you Chef Greg!

Chef Greg surpassed our expectations! He is very knowledgeable, personable, and makes delicious food. We had wanted more of a cooking lesson, but I accidentally booked a private chef experience. We chatted with him quite a bit before the event to communicate our hope to have it be interactive and educational and I could tell he put a lot of thought into modifying the menu and experience to meet and surpass our expectations. I learned a lot from him, ate a ton of delicious food, and would absolutely do something like this again.

I wanted to thank you for the cooking class at our home last week. My girlfriend and I really appreciated your tips and we think we learnt a few good techniques. However, I felt that the experience could have been improved but didn't feel comfortable sharing the feedback with you during the class: You were very friendly, arrived on time and shared with us some good tips. However, overall, the experience was poor: The cooking classes was not hands-on at all. You called it a "tasting" but we had paid for a hands-on cooking class. You didn't use any fish or beef or chicken broth but rather bouillon cubes. The seafood chowder got really salty. You had the seafood for the seafood chowder in a plastic bag rather than in a proper container. Overall, we felt the ingredients were low-quality (lack of proper fish broth or beef broth). I would have been happy to pay an extra $20/person to have better ingredients. I really hope you don't take the feedback the wrong way and can improve the class for future customers. You are a great chef and I think guests would really appreciate better classes.

Chef Greg was phenomenal! Every dish was excellently prepared, he gave us tons of great tips on how to cook the dishes, he was very personable and easy to talk to. We were a little nervous about having someone come into our own kitchen to prepare the meal but it wasn’t an issue at all. He did a great job, we have tons of leftovers, and we would highly recommend him to anyone considering one of his classes!

Chef Greg is a true renaissance man! On top of an incredible four course meal, he regaled us with stories of his incredible life and travels. We sat around and laughed all while talking life, music, travel and of course food! The food was incredible and he talked us through every step of the process. We learned new techniques, terminologies, and approaches to cooking easy and delicious dishes. I would absolutely recommend chef Greg to anyone who wants an incredible meal and a fun and memorable experience to boot! I will definitely be doing this again!

Greg showed up on time and we got to speak a few times before he got here about kitchen equipment and prep. He has enormous experience and we actually did all 5 Mother sauces Plus variations! This class is for people who want to learn how to cook- not for someone to teach you a recipe. You can follow that from a page. This is skill- wish I had done it in my 20's. Plus the skill set is so important we may all do the class one more time. For example we made the Hollandaise and in a separate pan had a reduction to alter it to béarnaise! If I only had berry's we would have made Sabayon! We did the béchamel and turned it into a few items and from the Volute we made marsala and Française. All along Greg told us short cuts and fixes. Our last sauce was the tomato and it was really good. Not like the Italian family style we have always made so for sure a useful skill. If you really like to cook and want true skills this is your class! Fantastic!
