A staple of Filipino home cooking, Chef Nancy presents adobo in a whole new context.
This cooking class menu will feature a wide range of Adobo dishes, each with its own distinct flavor base. Adobo is not just a recipe – it is a way of cooking and preserving food with the perfect flavor combination of salty, sour, creamy, nutty and umami.
Begin with an appetizer of grilled adobo seafood or chicken skewers. Your entrée is baked crusted pork belly with sides of salted egg tomato salsa and sweet pickled green papaya. You will also make your own warm garlic mushroom and tofu salad and adobo wild rice pilaf. Your meal concludes with palitaw, a sweet rice dumpling with grated coconut and burnt sesame seeds.
Guests are welcome to bring wine and beer to enjoy during the class.
