Chef Carlos is probably Spain´s foremost paella and rice expert. Not only he is technically and scientifically impressive, but being from Alicante, he also carries paella in his blood and heart.
There is no doubt that he is one of the best chefs in Spanish rice dishes; my experience with him has been excellent.

Chef Carlos is an exceptional professional. He conducted a masterclass on Spanish rice dishes for my company and adapted perfectly to using our products.
He not only created delicious recipes, but truly elevated our ingredients to another level, showing their full potential. The training was delivered for a Filipino Executive Chef, and Carlos managed to connect and inspire through his knowledge and passion for Spanish cuisine, she managed to learn the master's techniques and now is an inspiration in the city of Manila.
