Start by making a traditional beef salad with lotus root, balancing savory with earthy, umami fish sauce. Then, prepare a hearty and nutrient-packed dish of tender pork belly and shoulder, papaya, oyster, fish sauce, and vermicelli noodles. For dessert, enjoy a classic Vietnamese sweet soup.

Guests are welcome to provide wine and beer to enjoy during the class.

He’s held positions at top Hanoi resorts and has catered events for tour groups visiting the area. Though he currently serves as head chef in an Italian eatery, his regimen has expanded to include traditional Vietnamese dishes. Chef John looks forward to sharing his passion for fine cuisine with budding gourmets.
