Led by Host Daniel, you’ll learn all about the various flavors, ingredients and traditional cooking techniques used to prepare authentic mole sauce and mezcal.

Explore the taste profiles of seven different mezcal varieties paired with rich and savory mole sauces. Mezcal flavors range from lemon, cucumber and wildflowers to pineapple, orange blossom and agave nectar. Work with ingredients like ancho, mulatto and pailla chilis as well as a wide array of herbs and spices to prepare and taste seven different varieties of mole sauce.

Host Daniel has immersed himself in wine and spirits to become a certified sommelier, master mezcalier and spirit specialist. After managing a wine tasting room in Texas and curating wine tours in Spain and Portugal, he founded an institute in Mexico that promotes preservation and education of traditional distillations. His enthusiasm for heritage beverages is evident in tasting sessions featuring tequila, mezcal and mole sauces. An expert guide, Host Daniel enjoys helping others explore the world of spirits.

We booked this because we couldn't leave Oaxaca without tasting all the mezcales and all the moles on offer and this was certainly a great way to do that. The setting was stunning and the presentation was lovely as well. I thought the pairing worked great and despite the very high price for small tastes of each, it was worth the experience. My only regret is that I bought and was really looking forward to the mole almendrado, and thought I had clearly explained that we were only traveling with hand luggage, but it was rudely taken away from us at the airport in Mexico city despite assurances by our host that because of the packaging, it would be allowed in. Very disappointing!

Do not hesitate to book this. It is a wonderfully unique experience that is put together in a very thoughtful way. Daniel and his team do a great job of creating a very convivial atmosphere, so much so that by the end of the tasting everyone in the group had become friends. Because Daniel is a mezcal sommelier and runs his own Agave Spirits Institute, he is obviously very knowledgeable about the subject, but he and his team explain it in a way that is accessible to all. Some highlights: 1) all the mezcal and mole are made locally and are incredibly unique; 2) the flavor notes of the mezcal are described & discussed well- but not in a pretentious or boring way, the atmosphere is always one of a party; 3) you are provided with well portioned tastes of both mezcal and mole; 4) Daniel created such a fun atmosphere that almost the entire group went out afterwards to a local wine bar, where Daniel provided us with more information about wine, food, etc. It was a raucous and highly enjoyable time that allowed us to make friends with both CDMX locals and other travelers. Don't hesitate- just book!

This was a truly wonderful experience! The educational aspect about mezcal was too knotch, I was stunned by their variety and nuance. I’m a big fan of mole and getting to taste so many was a joy! Highly recommend for any foodie!
